Catch-Up on Week One, day(s) 1? and 2?

This blog is just for me to document my relationship with food and the choices I make; hopefully, I will develop new senses of health, balance, and creativity along the way! I meant to start it on Saturday, July 12, but only remembered today and have completely forgotten what I ate except for some meals yesterday, so I will start there.

Yesterday was quite an enjoyable day, spent with friends (one of whom just arrived back in town). I don't remember what I ate for breakfast or lunch, but I do know that I had a glass of wine and split a piece of pistachio cheesecake and strawberry shortcake with my friend Lea. It was absolutely delicious! Later that night, we stopped by Wingstop. I got their smallest combo because my stomach wasn't feeling well, so a 6 piece (half Atomic/half Cajun) with fries and ranch. It was a bit of a heavy day - especially since I just remembered that I DID eat lunch, which was a microwaveable saucy beef broccoli that I added some leftover larb muang to. 

Today (July 15) I woke up at around nine, but wasn't very hungry and forgot to eat lunch until around noon, where I made a pork sandwich with just one slice of bread since I only had one slice of pork roast left. This time, I added the usual salad greens but changed the sauces to cilantro lime crema and guac, which I have found to be quite delicious. 

Around 4:30, I made some cheesy garlic toast because I felt pretty hungry, and dinner tends to be later at night around 7 or 8. I used a crusty end piece not only because it was the last one left, but because nobody else will eat them and I like how crunchy they get. Using jarlic instead of fresh garlic makes it easier to eat - otherwise I would be too lazy to make it and just stay hungry - but also provides a tart almost pickle-like flavor that I enjoy. Using the air fryer means I don't have to do anything but wait, so it's an easy and fast snack that I don't have to worry about. Of course, I always put some salt and pepper on to accentuate the flavor of the cheddar cheese.

For dinner, I made a sandwich by re-breading some steelhead trout using a light brush of olive oil and homemade seasoned breadcrumbs to improve the texture of the leftover fish. I put a tartar sauce and some pickled jalapenos on top.

 

And then I forgot for the rest of the week! But I will be better this week, promise!
